This recipe from Deliciously Ella is awesome. It has no meat and is totally vegan and it’s really adaptable. I changed up the recipe slightly -adding paprika as opposed to cayenne pepper, and it tasted great. The thing I loved the most though was it was cheap to make! Whack in the vegetables and stew a big batch so you can dip into the dish all week – that’s exactly what I’m going to do! The original recipe is on the Waitrose website.
