I have seen this recipe floating around for a while now and have seen quite a few variations of it – and it’s surprisingly tasty considering how little ingredients you need and how quick it takes to make these cookies.
As you’ve probably guessed from the title – these cookies only require three ingredients. Unlike most ‘healthy’ dessert recipes, the ingredients are really easy to get hold of which is a bonus when you just want to make something as a quick snack. I have tried these cookies with a variety of dried fruits and they taste great, you could even try adding in dark chocolate chips – I think most fillings would work!
The base of the cookie is made from banana and oats and as they only require about 10 minutes in the oven they are one of the easiest cookie recipes I have seen.
If you’re looking for a ‘healthy’ cookie recipe to enjoy with a cuppa I would definitely recommend this!
1 cup of oats
Filling of your choice (dried fruit, raisins, choc chips)
Method: Chop the bananas up and mash them slightly using a food processor. Then add one cup of oats and your choice of topping and mix – shape into cookie shapes and place on a non-stick baking tray. Pop in oven for about ten minutes on 200 degrees. Check the cookies regularly as they may cook quickly depending on your oven and mixture – voila!
